There are just too many too recommend. A VERY good site for anime nfo is www.animenfo.com, u can find almost all animes there complete with viewer comments and reviews.
Different ppl have different tastes though. (for example i hate most of miyazaki's/ghibli's works while others love it, totally to my bewilderment).
as for some of the more well known recommendations which i can remember at the moment...
For comedy, Trigun, GTO, goldenboy, u cant go wrong with those
For melodramatic stuff, ayashi no ceres and fushigi yugi, but i hate them.
For sports, slamdunk (which is also a great comedy), prince of tennis, and hikaru no go (anime about chess but you will like it whether u understand the game or not), and INITIAL D for racing, super anime.
For romance, I would pick Ah my goddess, To heart, Kare kano, Full moon o sagashite, maybe maison ikkoku, and love hina (though abit ecchi)
For action, scryed, trigun, cowboy bebop, Kenshin OVA and personally gundam series, especially wing
For adventures/fantasy, Elhazard the magnificient world OVA, Lodoss war OVA,
For unique animes with ambience/mystery noir, .hack sign, Evangelion
As for new animes which can be downloaded legally, Naruto, Es otherwise, scrapped princess, dn angel are pretty good bets. gundam seed too, but it just got licensed

Was there even a conclusion to that short movie (Blood the last Vampire)? I felt so ripped off after watching that movie. I almost thought the whole movie was a trailer.

Let's see... can't go wrong with Ghibli, as many have said Princess Mononoke, Spirited Away, and Tonari no Totoro are all high on my recommended list. Another excellent movie is Grave of the Fireflies - I dare you not to get all teary after this one!
I'll also second (or third, maybe) the votes for Rurouni Kenshin, Cowboy Bebop, Evangelion, Chobits, Trigun, and Ranma... these all bridge several different genres and do so quite effectively. Even if you're heavily into one genre (like action or romance), or heavily against a genre, all of these should still appeal to you.
A few other popular shows no one's mentioned - FLCL (Furi Kuri), Serial Experiments Lain, and Revolutionary Girl Utena. These are pretty heavy and take a lot of thought to understand well, though... I'd call them twisted, to be honest. Possibly not for the anime rookie. O.o But still very worth checking out if you're into shows that make you think.

yup i agree EVA is a masterpiece FLCL is just 2 cool... and i personaly love UTENA, AND SAILORMOON....... and lets not forget the GREAT MACROS ZERO...(any1 know when episode 3 is coming out?) go sailormoon!
I skimmed through but didn't see Hajime no Ippo, might be wrong ~ but I absolutely love this anime!!! It's a boxing one, that might sound kinda un-interesting, but the fights put me edge of my seat and to boot, it's a long series, 75 or something? can't remember, but every episode I've seen thus far (63) is just awesome! I completely recommend this series to any action fans!
Noticed Azumanga Daioh was one others put, I think this was the funniest anime I have evr seen! Get it if you into comedies, and it's finished so all the eps are already out, 24 + shortmovie (5min) and something else I think

You know VIZ, they are real bastards when it comes to anime! You know how VIZ treated Maison Ikkoku and its fans in the past, dont you?
Dropped the vhs release, overpriced as well. Lettin the fans down! Made them wait for 3+ years for nothing! Every year at the anime expos "Maison Ikkoku will be next year!", no sign of it!
They have finally made a progress on it. They have released Maison Ikkoku mini box set. The box consists of 3 dvds, each dvd included 4 eps. 12 eps altogether in the box. Priced at 35-40$ which is not bad! Mini box #2 is on the way, by end of this year.
Then again, Will VIZ plan to release the rest of Maison Ikkoku?
I have my doubts. Viz might pull another dirty trick from its sleeve!
I'll wait till Maison Ikkoku is released completely, I may consider buyin it. I'm not a fan of VIZ! I'm glad that I purchased the bootleg, quality is good and the subs as well despite some missing lines and objects aren't translated such as signboards, books, buildings. I remember all of them from memory

But my bootlegs all have good quality and good subtitles
If you are going to buy bootlegs, you should get a good one
and yes Viz do suck
3 eps a disc for most series
Ranma is 56 discs if you buy the originl dvds and not the boxsets - and they always make mistakes in boxsets and have to take them back
