I've been looking up VCD releases of some dramas recently and I've noticed they just seem to be the Japanese VHS tapes burnt (Pressed? Not sure if they're official always) to CDs. My biggest question though is how good are the subtitles. If they are in Chinese, how reliable are they?

They are usually ok, understandable. But some of the translation is not that accurate, from the little Japanese I could understand.
